Flavourful chicken drumsticks marinated in a spiced coconut milk mixture, air fried to juicy, aromatic perfection.

Prep Time: 1 hour (including marinating)
Cook Time: 20 minutes

Ingredients:

  • 80 ml (⅓ cup) coconut milk
  • 1 tbsp tomato paste
  • ½ tsp garam masala
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1 tsp cardamom
  • 1 tsp garlic powder
  • 1 tbsp grated ginger
  • 1 tsp salt
  • 4 chicken drumsticks

Instructions:

  1. Combine all ingredients except the chicken in a bowl and mix well.
  2. Soak the chicken drumsticks in the coconut marinade, tossing to coat thoroughly. Marinate for up to 1 hour.
  3. Preheat the air fryer to 175°C (350°F) and press Start/Pause.
  4. Remove chicken from the fridge and place in the preheated air fryer basket.
  5. Cook at 175°C for 20 minutes.
  6. Serve with steamed basmati rice.
